Ingredients: |

• 3 cups Cake Flour (sifted) or 750 ml
• 3 tsp Baking Powder
• 3 tsp Baking (Bicarbonate of) Soda
• Milk or 1 1/2 cups or 375 ml
• 1 1/2 cups Bananas (pureed) 375 ml.
• Butter (melted) =1/2 cup. = 125 ml.
• 1 cup light Brown Sugar = 250 ml.
• 2 tsp Vanilla Essence

How to make Light Banana Bread: |

Preheat oven to 325 °F (165 °C). |
• |
Sift together cake flour, baking powder and bicarbonate of soda in a large mixing bowl. |

Whisk bananas, milk and butter together in a separate bowl. |
• |
Add brown sugar and vanilla essence. Stir. |
• |
Gradually add the flour mixture to the banana mixture and mix well. |
• |
Pour the batter into a rectangular Pyrex or oven roasting pan. |
• |
Bake the batter for 25 to 35 minutes till the top of the cake turns brown, and cake pulls away a little from the sides of the baking dish. |

Icing; butter, icing sugar, little milk, flavor; beat until smooth.
