A good mixed vegetable curry powder, like "sabji masala", from an Indian groc. store, is a good base, and it is simply made of the spices, premixed for you!
Italin, greek, mexican, chinese; many cuisines have vegetarian versions, so don't think you have to eat curry all the time! Hot is also not required, it may be mild, as seems best.

3. Basic Chinese stir fries are easy and very healthy with rice or noodles. Use bok choy, pea pods, broccoli, bean sprouts, celery, mushrooms, asparagus, brussels sprouts, potatoes, or any vegetables. First, fry till browned crispy all sides cubed 1/2 block extra firm or firm tofu first, then put aside. Cut and fry veggies in pan, moderate heat, with a little corn or other oil then, add spices as follows; sesame oil, butter, black pepper, little white pepper, candied ginger, or ginger powder ( watch! may be hot!) asfoetida not garlic, anise or fennel, soya sauce, brown sugar tiny amt., teaspoon cider vinegar. or so Fry the veggies a bit now with the spices, and when cooked, add the tofu and 1/3 cup cashews or almonds. Serve with rice or noodles.
Sauce; water, optional ketchup or pineapple or other fruit juice, ginger, sesame oil, fennel, pepper, cider vinegar, brown sugar, garlic or asfoetida, honey, butter; Thicken sauce with cornstarch or potato flour, or regualr flour even, pre-stirred into a 1/3 cup of Add almonds or cashews for extra niceness.
