Wash 1/4 cup each of red/orange lentils and mung lentils, any two or more lentil types will do. Cook at medium heat in 3 cups water with lid partially on, or until fairly well broken down, takes about 40 minutes. Add pinch of salt and 1 tbs.oil or butter, 1/3 tsp tumeric. 
 

Then add 1/3-1/2 tsp.  ( or more, of any spice among these, according to your taste designs) black pepper, tumeric, ginger, fresh coriander powder, cumin powder, garam masala, anise seeds, fennel seeds, fenugreek seeds, curry powder or sabji spice, basil, asfoetida , methi (fenugreek) leaf, 1 pod black cardamon, 3 cloves, 3 small pieces cinnamon stick.

 

Add 1 tsp. brown sugar, 1/2 tsp. apple cider vinegar, salt to taste later...  Add 2 tablespoons oil or ghee or butter, or combo. No no no canola. 

 

If you need more water, add as needed as you go. The veggie pieces should be about this "......." size, square or oblong, roughly, different shapes for each veggie used. Ex 1 medium potato, 2 med carrots, 1 cup  spinach chopped; or cauliflower/ potato, or sweet potato and spinach and peas, etc Try to combine different colors of vegetables, and  use spinach often.

 

Add 4 tbslpoons of pre-mixed, stirred well with water, dried coconut powder, such as MAGI brand, or if you have the the small margarine-like hard boxes use about 1/3--1/2 of the common child's "drinking-box" size ones, or add a large handful of shredded sweetened or unsweetened coconut at this point.

Alternative with tomato taste; Try;   adding 4 tblspoons tomato paste, but not both tomato and coconut at the same time. Try the alternative another time, too! I prefer the coconut, but both are excellent. Add an extra 1/2 tsp. of brown sugar, or 1/2 teaspoon molasses, if you go with the tomato paste, plus another 1/2 tsp of garam masala, plus 1/3 tsp oregano. 

 

You may like to add a little chilis to taste, this recipe is otherwise mildish to medium, depending on your choice of curry powder and potency of ginger. 

 

 Add about 1 1/2 cups of chopped vegetables, such as potato and cauliflower and spinach. Cook with lid on at low boil for four-ish minutes, then simmer without lid for about ten minutes, at low heat.

 

Serve with rice, capatis, yogurt, clean water.  Hare Krsna!

Offer them to Godhead on your altar, then, enjoy the remnants of your prasadam sacrifice.
