Here's a classic recipe for waffles that uses eggs and flour:

 

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs  -  substiutute  just under 1/4 cup chickpea water
  • 1 3/4 cups whole milk
  • 1/2 cup melted butter or ghee
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate mixing bowl, whisk together the eggs, milk, melted butter or ghee, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and whisk until just combined. Don't overmix the batter, as this can make the waffles tough.
  5. Grease the waffle iron with a bit of butter or ghee, then ladle the batter onto the iron. Close the waffle iron and cook until the waffles are golden brown and crisp, about 3-5 minutes.
  6. Serve the waffles hot with your favorite toppings, such as maple syrup, whipped cream, fresh fruit, or butter.
