Steam three potatoes of medium size, washed nicely and cut in half, for ten minutes. Save the water.

In a medium sized casserole dish, add 2 Tblspns of olive oil, and also of ghee, one tsp black pepper, one / 2   tsp of oregano, one tsp. of Hungarian paprika, one/half tspn of anise seed powder if available, 1/2 tsp of "black" salt, or regular sea salt salt, 1 tsp of MDK or Bedekar's or Kitchen King etc Phava-bhajiya, a type of premixed "curry" powder, or subji masala, or sambhar masala, (available in most Indian grocery stores, or Superstores here in Canada, or alternatively, 1/2 tsp chili powder and 1/2 of your favorite hot premixed curry powder, one 1/2 tsp coriander ), and add one tsp crushed parsley, 1/2 tspn basil, 1 tsp fenugreek leaf or 1/2 of crushed seed powder, one whole clove is optional, or a pinch of powder. 1/3 tsp of asafoetida is also optional. Also add one/half tablespoon red wine vinegar or apple cider vinegar. Add one tablespoon brown sugar.

For a stronger spiced quality , double all spices. For veryvery mild, 1/2 all spices, and skip the premixed curry powder and hot curry powders.

Add one cup green peas or mixed chopped vegetables of your choice, one cup chopped fresh tomatoes, and 1/3 cup grated parmesan, and 1/2 cup of any other cheese, such as old cheddar, mozarella, etc You may now add 1/2 cup of the water used to steam the potatoes.

Cut the steamed potatoes into moon-shaped slices, and mix everything together lightly without breaking the potatos up too much. Put some extra pepper and grated parmesan on the top, which should be well above the water line at this point!  The extra water will  cook off  after a while, mixing the vegetable flavors, and then there will be a good browning of the cheese etc on top and sides and beneath when ready;  about 45 minutes to an hour, not less.

Cook at 360 degrees uncovered for about an hour, until a nice crispy brown is achieved on the top and sides of the baking dish.

Offer with yogurt to Srila Prabhupada, with nice rice, hot thin chapatis, salt, and water.
